cranberry and white chocolate christmas cookies

december is quickly whizzing by and before we know it school will be out for the christmas holidays and then the fun really does begin!

but what about christmas gifts? well this year we are going to cook up a cookie treat. we baked these last year and they didn’t last very long at all, so we are going to make gift bags for the teachers this year full of yummy cookies.

the recipe is a nigella one, which can be found in her nigela christmas book. if you don’t have the book i have shared below, such an easy recipe to do for really scrummy cookies with a hint of christmas!

you will need:

– 150g plain flour
– 1/2 teaspoon baking powder
– 1/2 teaspoon of salt
– 75g rolled oats
– 125g soft butter
– 75g dark brown sugar
– 100g caster sugar
– 1 egg
– 1 teaspoon vanilla extract
– 75g dried cranberries
– 50g pecans
– 150g white chocolate chips

what you need to do:

preheat your oven to 180 degrees celsius, gas mark 4. don’t forget to reduce a little if you have a fan oven. i didn’t do this first time round and they were a little errmmmmm burnt overcooked. line a baking tray with baking parchment.

in a bowl mix your butter and sugars until they become creamy. i used a hand whisk for speed. then add your vanilla extract and egg and beat throughly again.

next add you flour, baking powder, salt and rolled oats into the mixture and beat again. this time i started this off by hand to avoid a cloud of flour and oats, then finished with the hand mixer.

roughly chop the cranberries and the pecans and add these to the mix together with the white chocolate chips. fold these in by hand until evenly mixed in.

put a tablespoon of mix into your hands and roll into balls and place on the baking trays. squish these balls flatter with your palms. make sure you leave good space in between each squished ball as these spread a little when cooking.

cook for around 15 mins in total, but give them a quick check a 10 just incase. they are ready when they are a lovely pale gold colour and overcooked when they are a mid brown! when you take them out of the oven they will need to cool for a while on the baking tray, around 5 mins, as they will be too soft to lift from the trays. once they have hardened a little let them cool off fully on a wire rack before scoffing with a cup of tea!
